Pleasant memories of dining together. This is not a finishing line, I want to continue being creative.

After every holiday I return with ten new ideas that I’ve had elsewhere. I may only be able to make something of three, but I stand four-square behind all ten. Being creative is part of my profession, it’s a pity that not all my dishes have been photographed. A painter also creates, but creates for centuries. My “art” has disappeared from the table within ten minutes. But if I do my job well, the experience remains in the minds of the guests for a long time.

Inside the restaurant or outside on the terrace, enjoying the ever-changing views, the raspberry and herb garden, the works of art and our own local apple trees: the Gronsvelder Klumpkes. All ingredients for the good life are here in abundance. The most delicious dishes for the most spoilt guests. Recommended by Michelin as excellent value for money and a splendid location. What more could you ask?

Les Marolles

Le bon est dans le vrai.

My parents were a perfect team. They made a house a home. Every-one was welcome and hospitality and warm-heartedness were the order of the day. With her fantastic culinary talents – and with the help of a decent glass of wine – my mother was able to create an atmosphere that we all enjoyed enormously. You just had one wish: that it would never end.

My parents were the example for the way in which I work now. In Les Marolles, I try to recreate that special atmosphere. The starting point is good honest Dutch and Belgian hearty food. Seasonal products and local dishes: pure, simple and full of flavour.

This approach is also reflected in the restaurant itself, with its splendid old elm panelling and the antique interior. It was originally part of a building in Les Marolles, a working-class district of Brussels. It emanates warmth and character and should never be changed.

Welcome home. In a world that occasionally seems to have been turned upside down, where chaos sometimes looks ready to prevail and where the old certainties no longer seem so certain, we have remained an oasis of calm. A warm home from home, offering relaxed hospitality and consistent quality.

Eschewing the vicissitudes of the outside world, we have stayed true to our own standards. Familiar and recognisable, but with a healthy receptiveness to new influences and ingredients. They have come to us as a new, younger generation has joined the business. We’ve always said, “Cook with your heart, serve with your heart”. That will never change, but from time to time we combine experience and innovation to add a new dimension.

“Classic Franco-Belgian cuisine” has become “Franco-Belgian with a global touch”. Classics that will never disappear from our menu, such as skate and cod, have been joined by contemporary dishes including pastas and some surprising vegetarian twists. All available as part of some great set menus, as well as à la carte. In other words: something for everyone. Young or old, regular guest or new customer, gourmet or bon vivant. Our door is open to all. And at the end of the evening, after everyone has enjoyed a delicious meal, we hold open our door and wish them all a good journey home.
