We have preserved the best features but we are keen to move with the times. That applies to the interior, to the kitchen and to the team. The chef is often in the spotlight, but it’s the entire team that’s important. Both those in the kitchen and those serving. They are both part of a tightly-knit team with the guest being the centre of attention. The enthusiasm for cooking is the daily source of drive and inspiration.
The market in Liège is also a source of inspiration, being close to the growers and suppliers and where the fresh vegetables are irresistible. I am also inspired by thinking back over the evening while enjoying a decent glass of wine and by this splendid corner of Maastricht, located between churches and convents, historic university buildings, the art and drama school. Where the River Jeker gently meanders and where art, culture, history, and old and new features come together.

Eschewing the vicissitudes of the outside world, we have stayed true to our own standards. Familiar and recognisable, but with a healthy receptiveness to new influences and ingredients. They have come to us as a new, younger generation has joined the business. We’ve always said, “Cook with your heart, serve with your heart”. That will never change, but from time to time we combine experience and innovation to add a new dimension.
“Classic Franco-Belgian cuisine” has become “Franco-Belgian with a global touch”. Classics that will never disappear from our menu, such as skate and cod, have been joined by contemporary dishes including pastas and some surprising vegetarian twists. All available as part of some great set menus, as well as à la carte. In other words: something for everyone. Young or old, regular guest or new customer, gourmet or bon vivant. Our door is open to all. And at the end of the evening, after everyone has enjoyed a delicious meal, we hold open our door and wish them all a good journey home.

“As we have a history of wine dating back to 1740, you could say that we have a special significance not only in Maastricht but throughout the Netherlands when it comes to high-class wines.
The first wines were bottled here at the end of the 18th century, and we even have wines from the early 1900s in stock. Our long history is still cherished by our team of wine experts. Our buyer, our sellers and our oenologist are specialists who have been in the wine trade for years and have knowledge and enthusiasm. The monumental building that accommodates our wine shop underlines our long history. The original ancient vaulted cellar is the perfect location to store the wines.
