The chef is often in the spotlight, but it’s the entire team that’s important. Both those in the kitchen and those serving. They are both part of a tightly-knit team with the guest being the centre of attention. The enthusiasm for cooking is the daily source of drive and inspiration.
The market in Liège is also a source of inspiration, being close to the growers and suppliers and where the fresh vegetables are irresistible. I am also inspired by thinking back over the evening while enjoying a decent glass of wine and by this splendid corner of Maastricht, located between churches and convents, historic university buildings, the art and drama school. Where the River Jeker gently meanders and where art, culture, history, and old and new features come together.

It is a pleasure to welcome guests at this splendid Mediterranean-like location on the River Meuse. The rows of oleanders and olives decorating the Mangerie restaurant terrace enhance the atmosphere and the smell of basil wafting through the restaurant stimulates the senses in expectancy of the creations that will appear on the plate.

Pleasant memories of dining together. This is not a finishing line, I want to continue being creative.
After every holiday I return with ten new ideas that I’ve had elsewhere. I may only be able to make something of three, but I stand four-square behind all ten. Being creative is part of my profession, it’s a pity that not all my dishes have been photographed. A painter also creates, but creates for centuries. My “art” has disappeared from the table within ten minutes. But if I do my job well, the experience remains in the minds of the guests for a long time.
Inside the restaurant or outside on the terrace, enjoying the ever-changing views, the raspberry and herb garden, the works of art and our own local apple trees: the Gronsvelder Klumpkes. All ingredients for the good life are here in abundance. The most delicious dishes for the most spoilt guests. Recommended by Michelin as excellent value for money and a splendid location. What more could you ask?
